Strawberry Rhubarb Danish ~ By Victoria

 
 


 
 These are SOOOO good!!  I've made them a couple times this summer and had to guard them in order to get just one picture for the blog!  The directions are pretty sketchy when it comes to how you shape them, so I took some pictures to show what I do. The directions say to let the dough chill overnight, but I was in a hurry one day so decided the night would last about 4 hours. :) It worked fine.
 
 
 
 
 
Danish Pastry Dough:
 
1/4 cup warm water, 105*F. to 115*F.
1 package active dry yeast
1/2 cup milk, at room temperature
1 egg, at room temperature
1/4 cup sugar
1 teaspoon salt
2-1/2 cups all-purpose flour
2 sticks cold unsalted butter
 
 
 
Pour water into bowl; add yeast and let stand for 2-3 minutes until yeast foams. Add milk, egg, sugar and salt and whisk to mix; set aside.

Measure flour into food processor with metal blade in place. Cut butter into 1/4 inch thick slices and drop into flour. Pulse 8 to 10 times, until butter is cut into 1/2 inch pieces.

Empty flour mixture into bowl with yeast and with rubber spatula, gently fold the two mixtures together just until the dry ingredients are moistened. Don’t be too energetic! The butter must remain in pieces so that you will produce a flaky pastry, not a bread dough or cookie. Cover bowl with plastic wrap and refrigerate overnight (or up to 4 days to suit your schedule).

Lightly flour a work surface; turn dough out onto it, and dust dough with flour. Using the palms of your hands, pat dough into a rough square. Roll out to 16 inches on a side. Fold dough into thirds, like a business letter and turn it so that the closed fold is to your left, like the spine of a book. Roll out again, into a long narrow rectangle, about 10 inches wide by 24 inches long. Fold into thirds again. Roll out to make a 20-inch square. Fold square into thirds again to make a long, narrow rectangle. Then again, fold into thirds to make a square. (If at any point in this procedure the dough gets very soft, cover and chill it for 30 minutes or so.) Cover and chill the dough before final shaping. You can store the dough in the refrigerator for 4 days or wrap it air tight and keep it frozen for 1 month; thaw overnight, still wrapped, in the refrigerator.

Cream Cheese Filling:
8oz cream cheese (softened)
1 egg yolk
1/4 cup of sugar
1 tsp vanilla
2 tbs flour


 Mix the ingredients together and chill for at least 30 minutes.

 Preheat oven to 400f.
 Roll out the dough,  cut into desired shapes, top with cheese and then fruit. Brush edges with egg. sprinkle with sugar. and bake for 20-30 minutes or until golden.

Sour Cream Rhubarb Cupcakes


    These were FANTASTIC!  I made a few changes, but did not stray far from the original recipe.  I wanted half apple and half rhubarb, so threw in some chopped apple along with the prescribed amount of rhubarb in the recipe.

THEN.  I stumbled across the most perfect butter-cream frosting in history.  Absolutely un-healthy, fattening, artery-clogging...etc.  But I was looking for something really firm and buttery, and this recipe fit the bill.  Nothing wrong with a small splurge for special occasions, in my opinion :-) I'll post the frosting recipe later.

 Sour Cream Rhubarb Cupcakes
Makes 12-16 cupcakes
Ingredients
1 ¼ cups all purpose flour( I used half whole-wheat)
¾ cup  granulated sugar
1 ½ tsp baking powder
¼ tsp salt
1 stick softened butter
2 medium eggs
½ cup sour cream
1tsp vanilla extract
3/4 cup rhubarb, trimmed and chopped 
3/4 cup pealed apple chunks
Instructions
1. Preheat oven to 350F. Prepare a baking pan for normal size cupcakes with 12 cupcake liners, or a mini cupcake pan with 24 liners
2. Mix flour, sugar, baking powder and salt in a large bowl.
3. Add butter, eggs, sour cream and vanilla and beat until smooth. Stir in chopped rhubarb.
4. Divide batter amongst the cupcake liners and bake for 20-23 minutes for normal size cupcake, 18 minutes for medium and 15 minutes for mini. Check doneness with a toothpick before removing from the oven. Let cool.

Rhubarb Sour Cream Pie (With Added Strawberries ;-) ~ by Valerie

Another great springtime dessert!!!
 
Lydia's dear mom-in-love and our precious friend, Janet,
first introduced our family to the wonders of home-grown rhubarb! 
She served us a rhubarb coffee cake one day that was oh-so-delicious!!!!
And she made scrumptious rhubarb muffins for Richie and Lydia's reception treats.
So we are very excited about finding this amazing recipe recently
to use our little harvest of rhubarb on!
We just discovered too, that if we add some strawberries to it,
it is a great way to stretch the rhubarb when we don't have quite enough,
and it becomes even more flavorful and beautiful! 
And the sour cream makes it especially different from most fruit pies, and well . . . .
wonderfully creamy! ;-)
 
 
Ingredients:
 
1 (9 inch) unbaked pie crust
4 cups chopped fresh rhubarb
1 egg
1 1/2 cups white sugar
1 cup sour cream
 
(The last couple times we made this pie, we used 2 cups of rhubarb and 2 or more cups of strawberries.  We also added a little extra flour to help with the extra moisture from the strawberries.)
1/3 cup all-purpose flour
 
1/2 cup all-purpose flour
1/2 cup brown sugar
1/4 cup butter, melted
 
Directions:
1.Preheat the oven to 450 degrees F (220 degrees C).
2.Press the pie crust into a 9 inch pie pan. Spread rhubarb in an even layer in the bottom of the crust. In a medium bowl, whisk together the egg, white sugar, sour cream and 1/3 cup of flour until smooth. Pour over the rhubarb.
3.In a small bowl, mix together 1/2 cup of flour and brown sugar. Stir in melted butter until the mixture is crumbly. Sprinkle over the top of the pie.
4.Bake for 15 minutes in the preheated oven, then reduce the heat to 350 degrees F (175 degrees C). Continue to bake for 40 minutes, or until the edges have puffed, and the topping is golden. The center may still be slightly jiggly. Cool completely before slicing and serving.
