Grandmother's Buttermilk Cornbread ~ by Valerie

This isn't actually our Grandmother's recipe, but it tastes like it should be!  :-)
It is very moist, and slightly sweet! 

1/4 pound butter
2/3 cup white sugar
2 eggs
1 cup buttermilk
1/2 tsp. baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 tsp. salt

1.  Preheat oven to 375 degrees.  Grease an 8 inch square pan. (We double the recipe and use a 13 X 9 pan.)
2.  Melt butter in large skillet.  Remove from heat and stir in sugar.  Quickly add eggs and beat until well blended.  Combine buttermilk with baking soda and stir into mixture in pan.  Stir in cornmeal, flour, and salt until well blended and few lumps remain.  Pour batter into the prepared pan.
3.  Bake in the preheated oven for 30 to 40 minutes, or until  toothpick inserted in the center comes out clean.

  1. Do you buy buttermilk at the store, or do you mix milk and vinegar? We don't normally have buttermilk at home so I would have to substitute something to make this recipe. :)

    Thanks so much for the comment. We don't usually have buttermilk on hand either, so we often do just what you mentioned about adding the vinegar or lemon juice to milk. We did have some on hand recently for some other recipes, so I was able to use it this time. But I don't think it makes much of a difference either way!
