Banana Bars ~ By Victoria


 
These moist and flavorful banana bars are certainly a favorite around here, even for Daddy who won’t eat bananas plain! J They are super easy to make and this is a great way to use over-ripe bananas!

1 cup shortening
2 cups sugar
1 cup milk
1 tsp. vanilla
3-4 bananas, mashed
3 cups flour
1 tsp. baking soda
1 tsp. salt

Cream shortening and sugar, then add milk, vanilla and bananas.   Mix flour, baking soda and salt together.   Add to wet mixture and stir just until moistened.

Pour into greased and floured jelly roll pan.   Bake for approx. 30 minutes at 350 degrees.

Glaze (We double this)

2 TB. butter
1 tsp. vanilla
2 cups powdered sugar
1/4 tsp. lemon juice
2 TB. milk.

  1. Victoria, I am excited to make this recipe. It just sounds tasty! I don't prefer eating bananas plain either, but I'll just make myself make the recipe for my family and eat it with them. The things we do for one another. He!He! Maria will have to convert this as a gluten and dairy free recipe. Thanks for sharing

    It was nice visiting with you all at the capitol yesterday!

    I love making these as all the measurements are SO easy. I hope it turns out good for you! It's a lot like banana bread, but better. :)
